Professor of colloids and surfaces at the University of Leeds, Anwesha Sarkar, referring to a recent study that focused on finding out what makes chocolate so delicious.
Why It Matters: Researchers in the United Kingdom studied what makes chocolate so good. It all boils down to the slick outer layer of chocolate – AKA its fat. Researchers can use the findings to help develop healthier and more sustainable chocolate options (and eventually other foods) now that they know it’s the outside taste and texture that matters, not as much the inside.
